Super Simple Gluten Free Crumb Topping

What makes baked goods even better?  A crumb topping of course!  I remember working in a bakery storefront as a teenager and the best muffin we made was a Peach Crumb muffin.  This morning I went out to pick fresh cherries from our tree and I thought what a great idea to make cherry crumb muffins.  Using last months The Really Good Food Company Vanilla Muffin Mix, I made five-year-old-approved Vanilla Cherry Crumb Muffins.

This crumb recipe is super easy and can be added to all types of muffins, pies, or just sprinkle it over some fruit to make a yummy fruit crumble.  What’s better?  I got to use some more of those great gluten free oats Tasterie featured a few month’s back from Bob’s Red Mill.

  • 1 cup gluten free oats
  • 1 cup brown rice or quinoa flour
  • 3/4 cup brown sugar
  • 4 tbsp margarine or butter if you eat dairy

I mixed this together with my hands and sprinkled it over my muffins before baking.  This is a firmer crumb.  Looking for something a bit more light and fluffy? Replace your flour with Gluten Free Pancake Mix.
